Bacala (Wild, Canada)


Wild-caught in Iceland using otter trawls and gillnets.  Bacala is salted codfish and needs to soak in the refrigerator for 48 hours in 3 gallons of cold water, changing at least twice a day then simmer  the fish in a pan until cooked through.  Mild and clean flavor with large flakes. 7-9oz
